  • Aged basmati rice1.5 cups

    Śāli rice — lightest, most Sāttvic

  • Water3 cups
  • Ghee2 tbsp

    The only fat that cools Pitta

  • Saffron strands12–15

    Soaked in 2 tbsp warm milk

  • Cardamom pods3

    Lightly crushed

  • Bay leaf1
  • Rock salt3/4 tsp
  • Rose water1 tsp

Vidhi · Method

  1. Wash basmati rice 3–4 times until water runs clear. Soak for 20 minutes, then drain.

  2. Soak saffron strands in warm milk for 10 minutes.

  3. Heat ghee in a heavy-bottomed pot over medium heat.

  4. Add cardamom, cloves, and bay leaf. Sauté for 30 seconds until fragrant.

  5. Add drained rice. Gently stir for 1–2 minutes to coat each grain with ghee.

  6. Pour in water and rock salt. Bring to a full boil.

  7. Drizzle saffron milk over the rice. Reduce heat to lowest setting.

  8. Cover tightly and cook for 15 minutes. Do not open the lid during cooking.

  9. Remove from heat. Let rest covered for 5 minutes. Fluff with a fork.

  10. Sprinkle rose water, gently fold once. Serve warm — each grain separate and golden.

Why it works

Aged Basmati (Śāli) is considered the king of rice in Āyurveda — it is Laghu (light), Snigdha (unctuous), and Madhura Vipāka (sweet post-digestive effect), making it ideal for Pitta. Ghee (Ghṛta) is uniquely the only oil in the Ayurvedic pharmacopoeia that cools Pitta while kindling Agni — it is Sahasra Vīrya (of thousand potencies). Saffron (Kuṅkuma) is a precious Pitta Rasāyana that purifies blood, enhances complexion, and uplifts Sādhaka Pitta (emotional fire). Rose water adds an extra cooling, heart-opening Prabhāva (special action).
